Crab and Chorizo Fritters

Ingredients:
  • 1 cup water
  • 1/2 cup (1 stick) butter
  • 1 1/4 teaspoons salt
  • 1 cup all purpose flour
  • 1 teaspoon ground cumin
  • 4 large eggs
  • 1/2 cup finely chopped dry-cured link chorizo (about 2.2 ounces)
  • 2 tablespoons sofrito*
  • 1/2 pound lump crabmeat
  • Canola oil (for frying)
Directions:
  1. Bring 1 cup water, butter, and salt to boil in heavy medium saucepan, stirring until butter melts and salt dissolves. Add flour and cumin. Stir vigorously 3 minutes. Remove from heat. Mix in eggs 1 at a time, blending well after each addition. Stir in chopped chorizo and sofrito. Gently stir in crabmeat.
  2. Pour enough oil into heavy large saucepan to reach depth of 3 inches. Heat over medium heat to 375°F. Working in batches, spoon dough carefully into oil by tablespoonfuls, flattening slightly with back of metal spatula. Fry fritters until cooked through and brown on both sides, turning once, and adding more oil as needed, about 5 minutes total.
  3. Transfer fritters to paper towels to drain; serve.
*A Caribbean cooking base usually made of tomato paste, onions, peppers, and spices; it's available at Cuban markets and at goya.com.

Tropical Decor For A Smaller Budget

When I imagine a tropical home, I see soft winds blowing sheer curtains from the ceiling to floor windows. I see much used patios complete with palm trees facing a beach then an ocean. I see bright colors and seashells gracing the walls and shelves of the home. I also see large plants that are placed on the floor and can grow as tall as the ceiling. These are the types of things that you'll want if you want to bring the tropics into your home.

To enhance your tropical decor, the furnishing should be light. If the current fabrics are dark, a slipcover could do this job nicely. If you have any wicker furniture, it should be out and used perhaps in the living room. Wicker furnishings of any sort should be accentuated. The wicker may be natural or painted white. If the wicker is painted white, most other things in the home should be white as well. The color of all of your furnishings should either be the natural honey colored woods or painted white. Both of these options lead to an open and airy feeling in the room.

Whether or not you have floor to ceiling windows is not as important as having that length in sheer curtains. Your curtains should be sheer for days when you open your windows. This will allow the curtains to gently sway in the breezes that come through the windows. Also, you don't have to live in front of a beach to have the feel of a beach right outside. You can add this feeling by incorporating these colors into your decor.

If you choose to paint the walls, you may choose a light sky blue or you may choose sandy beige. Or you can leave your walls as white as the clouds floating by. If you choose to leave the walls white, artwork depicting ocean scenes will help with a tropical atmosphere. Another addition to a tropical feel would be the use of seashells in your decor. They can be in the form or artwork or actually use the seashells in various places in your home for decor. Place them around an ocean blue candle on a clear glass plate and use as the centerpiece on your coffee table.

A wonderful touch to a tropical feel is the use of plants. There shouldn't be many. You don't want to turn tropics into the rain forest. There should be perhaps one or two large plants that sit on the floor. These plants should grow fairly large, but should not become too tall for the room they will live in. The elephant plant is perfect for this type of atmosphere. It's aesthetically pleasing by bringing just a hint of green into your decor just like there is just a little bit of green on found in tropical regions usually in the form of palm trees.

A tropical atmosphere is a light and airy one. Once you have created your tropical home decor, you can get the feeling of an exotic vacation everyday!

Spicy Mango Salsa

Ingredients
  • 2 cups diced fresh mango
  • 2 cups fresh peaches, pitted and chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh ginger root
  • 1/4 cup chopped fresh basil
  • 2 serrano chile peppers, diced
  • 1/4 cup fresh lime juice
Directions
  1. In a large bowl, mix together the mangoes, peaches or nectarines, garlic, ginger and basil or cilantro.
  2. Add the chilies and lime juice to taste; mix well. Allow to chill 2 hours before serving.

Tropical Salad with Pineapple Vinaigrette

I really love a tasty salad and this one is sooo good. The sweet of the pineapple and salty of the bacon make the perfect combination.

Ingredients
  • 6 slices bacon
  • 1/4 cup pineapple juice
  • 3 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • freshly ground black pepper to taste
  • salt to taste
  • 1 (10 ounce) package chopped romaine lettuce
  • 1 cup diced fresh pineapple
  • 1/2 cup chopped and toasted macadamia nuts
  • 3 green onions, chopped
  • 1/4 cup flaked coconut, toasted
Directions
  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. In a cruet or jar with a lid, combine pineapple juice, red wine vinegar, oil, pepper and salt. Cover and shake well.
  3. In a large bowl, toss together the lettuce, pineapple, macadamia nuts, green onions and bacon. Pour dressing over salad and toss to coat. Garnish with toasted coconut.

Coastal Candle Displays

If you love the beach and the beauty of the sea, you'll take to decorating with coastal theme candle displays like a fish takes to water. Collections of shells, stones and sea treasures collected from days spent combing your favorite beaches will be brought into play in these decorative displays. Accent your mementos from favorite beach vacations with craft store items such as artificial starfish, sand dollars, coral and sea horses.

Driftwood, Coral and Hurricanes

Accent a favorite piece of driftwood with this dramatic display. Start with a platter or charger large enough to accommodate your driftwood. Add a layer of plain or colored sand and arrange your driftwood on top. Surround it with seashells, sand dollars, pieces of coral, polished beach glass and stones. Add a few votive candles in cut glass or frosted glass holders for sparkle; or purchase candles in the shape of large seashells. This makes a great display for a table top. A piece of coral could be used in place of the driftwood.

Many variations on this theme are possible. For example, you could place a pillar candle and a hurricane on the center of the platter instead of the driftwood, surrounding it with shells, starfish, glass and stone pieces and a few tea light candles. Or take a glass cylinder, layer sand, pebbles and glass and push a pillar candle into the sand. Surround the candle with coastal accents like shells, sand dollars, and glass beads.

  • Make a sea inspired table wreath. Start with a flat backed Styrofoam wreath foam. Spray on craft glue and sprinkle with craft sand; let dry and shake off excess. Use hot glue to affix sea shells, stones and glass. Mix in a few larger items like sand dollars or starfish. Set your wreath on a round tray large enough to accommodate it and place a pillar candle and hurricane in the center of your wreath. If the tray is much larger than the wreath, add a border of sand and accent it with colored beach glass or faux pearls.
